2 tbsp sunflower or vegetable oil

1 onion, cleaved

2 garlic cloves, pulverized

700g potatoes, peeled and cut into pieces

4 carrots thickly cut

2 parsnips thickly cut

2 tbsp curry glue or powder

1 liter/1¾ pints vegetable stock

100g red lentils

A little pack of new coriander, generally hacked

Low-fat yogurt and naan bread, to serve
